I have been eating vegan for a while now, and the array of dishes I can now make has definitely widened. So today I thought I would do another “What I Eat In A Day” post, to show you what I eat on a typical day. As the weather is getting warmer, I have moved away from porridge and now eat a big fruit salad. I usually also eat a slice or two of sprouted grain toast with apricot jam along with this meal, but I didn’t manage to get a picture of it! I also always have a liter of water in the morning as well as a nice big mug of tea.
I can’t make it through the morning without my coffee and snack. I always have black coffee with a splash of almond milk, and as a snack I will sometimes have a handful of nuts, or sometimes also have a granola bar.
I have recently been obsessed with this salad. I mix two carrots, 2 big tomatoes, around 10 cherry tomatoes, some sun dried tomatoes (yes, I am obsessed with tomatoes!) and top it with half a avocado. I sometimes pair this salad with a toasted pita bread to fill me up.
I always get peckish in the afternoon, and so usually gravitate to some fruit. I also always have a big cup of tea to go along with it.
I’ve been loving trying out new vegan dishes, and this has become a definite favorite! Pasta with mushrooms, spinach, garlic, spring onion, and green pesto. I also have a big tray of oven baked veggies along with this (some favorites are: broccoli, carrots, eggplant, or brussel sprouts.)
And that’s a day of eating for me!
