Up until a few weeks ago, I had never really had to pack vegan work or school lunches. I was in University when I went vegan, and being blessed with a very relaxed schedule, I usually just ate lunch at home. I have recently started an editorial internship though, meaning that I’m in an office from 9 till 5, and thus have to take lunch with me. I had a bit of trouble at the start thinking of different lunches to bring, and some creations didn’t work out. I’ve since come up with quite a few good lunches, and so thought I would share them on here.
These lunches are very filling and carb-heavy; exactly what a lunch should be in my opinion. Your lunch has to be filling, regardless of where you’re eating it. A quick note I need to add though is that a lot of these lunches are “leftovers” from dinners. I purposely make more dinner than necessary, in order to be able to take it with me for lunch the next day. This saves time, and usually means you have a more elaborate lunch.
- Rice with 4 types of beans (chickpeas, kidney beans, garbanzo beans, and brown beans), seasoned with curry powder. I’ve also had this since topped with some cucumber, which was super yummy. For on the side, some dragon fruit with blueberries and raspberries. And an apple for later on in the afternoon, if I’m still feeling hungry.
- Couscous with mixed veggies (green beans, red pepper, peas, and carrot), topped with some roasted zucchini and cucumber. As a snack (to snack on throughout the day), some trail mix made with almonds, raisins, dried cranberries, dried apricots, and some dark chocolate chips.
- Brown pasta with red pesto, topped with roasted pumpkin and cherry tomatoes. When I feel like treating myself, I go to a juicery close to my workplace, and get their carrot and orange pressed juice. I only do this about once a week, but when I do, it’s delicious!
