Seeing as I haven’t done a What I Ate Wednesday post since January, I thought it was about time to post another one! Nothing much has changed diet-wise, I’m still eating whichever food makes me feel great. Today I am sharing some of my go-to meals: these are the types of foods I eat very regularly. They’re not very extravagant, but they are tasty and full of goodies.
Breakfast
I don’t think I will ever get tired of oatmeal for breakfast. This time I went for blueberry oatmeal (I simply add frozen blueberries to my oats while they’re cooking) and topped it with banana, almonds and peanut butter. I know I’ve said this countless times before, but I swear oatmeal is the ultimate breakfast food. It’s nutritious, filling and so tasty.
Lunch
Tofu scramble has been another staple in my diet since going vegan over 3 years ago. I actually shared the recipe for this a little while ago, you can find it here. I love having this for lunch with some toast and topped with lot’s of ketchup. I always add spinach to mine, making this meal very protein-rich.
Snack
I recently talked about incorporating more greens in to my diet, and one way I have been doing that is through kale chips. I’ve had a weird obsession with kale these last few weeks; I crave it on a daily basis. I either crisp it in the oven like this, or I fry it up with a little olive oil in a pan. Both ways a delicious, and it makes for the perfect afternoon snack.
Dinner
Sometimes I get lazy for dinner, and one of my go-to meals in that case is wraps. This time I went for a chana masala wrap. I sometimes make a big batch of chana masala and use it in meals like this throughout the week, and that’s what happened here. A wholemeal wrap with mango chutney (really takes this meal to the next level!) spinach and the chana masala. I usually eat two of these for dinner and feel very satisfied.
